With Easter weekend just around the corner why not whip up some yummy treats in the kitchen to share with your family and friends.
Here is a great recipe for “Mini Simnel cakes”
* 175g/6oz Butter (cubed)
* 225g/8oz Wholemeal self raising flour
* 1 tsp Ground Cinnamon
* 1tsp Ground Mixed Spice
* 100g/4oz Light Muscovado sugar
* 125g/5oz Mixed dried fruit
* 125g/5oz Chooped dried Apricots
* 100g/4oz Marzipan
* 3 Medium Eggs
* 150ml/5floz Milk
* 5tbsp Apricot Jam
* 300g/11oz Marzipan
* 15 chocolate mini eggs. 1, Preheat the oven to 180c/350f/ gas mark 4. Then line a 17x27cm rectangle baking tin with baking parchment (or grease with butter if you don’t have any).
2, Melt the butter in the microwave for 1 minute (make sure the bowl is microwave safe)
3, Grab yourself a large bowl and place in the flour, cinnamon, mixed spice, muscavado sugar, dried fruit and dried apricots. Then coarsely grate in the 100g of marzipan and mix them all together.
4, Break the eggs into a jug and add the milk, then mix together with a fork. Then add the egg/milk mixture into the dry ingredients along with the melted butter. Mix together with a large wooden spoon.
5, Once the ingredients are well mixed pour the mixture into the baking tin. Bake for 30 mins until well risen and firm. (Use a cocktail stick or a knife and press down into the center of the cake, if it comes out clean then the cake is done)
6, Turn out onto a wire rack and let the cake cool. When the cake is ready cut into mini squares.
7, Roll out the 300g of Marzipan and cut out flower petal shapes which will be part of the decoration.
8, Slightly warm the Apricot Jam and spread onto the top of the cake squares. Then place on the marzipan flower petals. Add an extra blob of jam onto the center of the petals and then finally add a mini chocolate egg. And there you go..yummy Simnel cakes for all your friends and family. Bexy
